It’s been a while since I’ve had the opportunity to make some macarons… Christmas is around the corner and thought it was time to get festive!

Simple as that.
Oh my…. it’s quite bad.
Since ripping open the packaging on my copy of Alison Thompson’s “Macaron” – go get yo’self a copy! – I’ve made several flavors. Each time they get better… if I say so myself.
Chocolate and Cinnamon..Chocolate macaron filled with a cinnamon infused dark chocolate ganache filling. Decadent, luxurious and so, so moorish!
Lemon… the lemon curd buttercream filling in these is to die for. Literally.
Choc Orange Macarons…. Jaffa in a biscuit. Y-U-M
and… quite possibly my favourite on this journey thus far – Strawberry, Vanilla and Lychee macarons. Oh my. Wow. These are delicious!
Stay tuned… I’m sure I’ll be making more. My relatives are loving me a little bit more these days!!
Before watching a recent episode of Australian Masterchef… I’d never really had a hankering to try to make macarons. I’ve read about them on various blogs and admired their smooth, slightly domed tops and crunchy looking little feet with their decadent layer of filling sandwiched between them – and – wait for it – never actually TRIED one! GASP!
Watching the contestants make a macaron tower under the watchful eye of pastry chef extraordinaire Adriano Zumbo, was enough to get me back on the net, pouring over blog entries for a recipe that looked, well, achievable!
Here is my first attempt.
Hmmm, a bit too big, a little flat but boy, were they delicious!!!!
The slightest crunch followed by the smooth caramel filling with a hint of salt…mmmmm!
OK, time to buy a book! Any excuse really… so I turned to Australian pastry chef Alison Thompson for inspiration and direction in this newly discovered world of seemingly innocent morsels of sweetness. My copy of “Macaron” arrived and, well, the rest is history…
