It’s been a while since I’ve had the opportunity to make some macarons… Christmas is around the corner and thought it was time to get festive!
Gingerbread spiced macarons… recipe adapted from Alison Thompson’s “Macaron”. Green and red, of course, for Christmas! These actually taste like gingerbread…well derr! Seriously, it’s a flavour that, although you expect it, still surprises you once it explodes in your mouth… sooooo lovely!
Salted caramel macarons. Okay, so not typically a Christmas flavour, I tried to make them look festive with a deep coloured biscuit and gold flecks on the top…I really just needed to make up an excuse to make these again. Wow. Can’t get enough of that filling! Salt and caramel – a match made in tastebud heaven.
I love these… What is an instant Christmas indicator? Candy canes of course! A white chocolate ganache filling scented with peppermint is sandwiched between these macarons. I coloured half the filling red and left the other half white and, with a swirling motion piped it onto the shells and voila! Candy Cane Macarons…. yum. And they’re darn pretty too don’t you think?
