A couple of years ago my journey in sugar took a sharp turn into the next level up. I enrolled in a course being run by Sydney’s Planet Cake – being run in Melbourne by the amazing Fran McGregor and Handi Mulyana. I’d always dreamed of doing this course and when it was being held in Melbourne I literally squealed with delight and enrolled straight away.
It was 2 manic days of sculpting, ganaching and covering on of the most challenging cake designs I’ve come across.
Unbeknown to me then, I was in esteemed company as many of my classmates were amongst the very best of Melbourne’s cake and pastry experts of which I am still in regular contact with today – and am immensely proud to call my colleagues.
I are this cake for my gorgeous niece Dimitra’s 16th birthday. Her favourite colours with my favourite flower, the peony.
I so love making this gravity defying cake and I am always so proud of the results!
