Naked Chocolate
“Naked cake” is term used for cakes that aren’t quite covered – no fondant and usually with just masked with a little buttercream.
This cake is technically a naked cake I suppose but masked with whipped chocolate ganache and offset by an arrangement of wafer paper roses. Something different. Chocolate on chocolate. Who can complain about that?
A Fairytale Wedding
A 7 iter confection for Melanie & Adrian. This towering cake was the centrepiece of their stunning wedding celebrations in Melbourne.
Quilted bottom tier, hand painted gold inlay with a hand made chocolate frog prince clambering up the cake, He is also painted in gold and encrusted in hundreds of Swarovski crystals. Oh, the romance! An oversized sugar rose offsets this stunning scene.

White on White Wedding
Simplicity and timeless elegance. A towering white confection designed for a wedding at the spectacular Level 89 at the Eureka Tower in Melbourne. An unforgiving design – nowhere to hide! Extended tiers hand painted in white lustre for added shimmer and crowned with an oversized sugar rose in full bloom.
Matthew’s Christening
A stylish affair with a palette of grey, gold and white.
The main cake – a towering confection featuring a custom designed and cut stencil. The top tier is framed by hand painted gold baroque scrolls and adorned with baby blue hydrangea blossoms and a gold mirror topper.
The second of the trio is a double barrel creation featuring a gilded gold leaf plaque with a grey baroque sugar frame and delicate hydrangeas blossoming on the edges.
The baby of the trio is a 6″ caramel mud cake gilded in edible gold leaf.
Complimented by vanilla cupcakes with painted gold lustre detail and adorned with hydrangea blossoms and vanilla macarons.

I was asked to contribute to an awesome international collaboration in Cake Masters Magazine – Fashion Through the Ages.
Along with 9 other amazing cake artists from around the world, I was given a decade to interpret in cake. Sweet Tiers represents the 1990s!
The 1990’s were loud and sexy. My creation was inspired by Gianni Versace. Renowned for combining luxurious classicism with overt sexuality. He was responsible for the birth of the era of the supermodel and as a result his fashion became inextricably entwined with 90’s pop music, celebrity and excess.
Cleavage threatened to spill out of tight, bold gowns and embellished brassieres were worn on the outside. Solid colours, bold geometrics, animal print and intricate details were Versace’s trademarks. Created for the super rich, his impact was felt across all sections of society as adaptations of his designs found themselves woven into our jumpers, leggings and accessories.
This creation pays homage to his incredible talent that still inspires to this day.
