The Mati – A Cake Designed to Protect!
The evil eye is a look that is believed by many cultures to be able to cause injury or bad luck for the person at whom it is directed for reasons of envy or dislike.The term also refers to the power attributed to certain persons of inflicting injury or bad luck by such an envious or ill-wishing look.
The ‘mati’ or ‘eye’ is a charm worn to protect against such ill projections and is widely regarded on the Greek culture as protection against many an affliction!
These charms are usually made of glass – hence the high gloss finish to this cake! White chocolate mud cake filled with a lemon scented white chocolate ganache.
Silver & Turquoise
A dear friend of mine celebrated her 40th birthday with a lovely intimate dinner with her family and closest friends. It was a great opportunity to try my hand at gilding a cake in silver leaf, a technique I’ve long admired but never actually performed myself.
Luckily my friend Jo loved the idea and thus this cake was created, just for her.
Balancing Act

I thought, hey- lets make an elephant on a ball! Great idea huh? Then I had to make it! I must admit, I have a habit of designing cakes and THEN thinking about the HOW. Hmmm, not really the way to go!
Setting Sail
This cake is an adaptation of a cake done recently based on the Imprintables range of stationery – namely the “Ahoy” invitation.
12″ round chocolate mud cake with dark chocolate ganache. All decorations are made with fondant.
Hello Birdie!
This cake was created for my cousin’s little girl’s 1st birthday celebration which took place in a local park.
In coming up with a concept for the cake, I was told that little Christina loved birds. So, putting these two elements together, this design was born.
Ava’s Stylish Birthday Party
I first had the pleasure of working with this client a couple of year ago for little Ava’s christening cake. So, I was really looking forward to making this little cake for her 2nd birthday.. a stylish event put together by her talented mum!
The birthday cake featured a bunny and the numeral 2 on top. The cake was complimented by miniature vanilla cupcakes with a buttercream swirl and vanilla sugar heart cookies decorated with fondant and royal icing.
Sophie la Girafe
Until I received the request to create this 1st birthday cake, I’d never heard of Sophie la Girafe. Yes, very uncultured of me. Apparently she is vintage…Sophie the Giraffe has been around for more than 49 years…
Since 1961, more than 30 million Sophies have been sold in the world. Geez! Have I been under a rock or something???
Sophie was sculpted, in one piece, from a 12″ square chocolate mud cake. Carved, ganached, covered in fondant with hand painted details. The birthday girl, upon seeing her, exclaimed “OOOHHHHH!” I think she liked it!
Samantha’s Princess Pillows
A 2 tier version of my princess pillow cake created for an adorable little girl’s 5th birthday.
The pillows were carved from chocolate mud cake, filled with Lindt chocolate ganache.
The crown is made from sugarpaste and airbrushed gold. All jewels are inedible… every girl needs a bit of bling!
